Loverly

So As I'm writing this, I'm listening to Dolly Parton. Just wanted to get you up to date. Now that you are, we can begin :-) So very fun and productive week for the bride to be! your looking at photos from the hike to American lake we did yesterday- then all the photos are going back in time. I don't know why- but don't worry about it. The Hike was wonderful! beautiful weather, plus we passed the two groups ahead of us, and we got to the lake first! But we only got to enjoy the silence for about 10 min, until the boy scouts came and started chucking rocks at the trout. Why are boys so loud? I mean I love kids, but why are boy's in particular soo loud? Well I guess girls are too for that matter- just about different things- like princess dresses- now those will always make little girls loud! ok sorry sidetracked- lets move on....
American Lake The trail leading up to the lake
Grove of Aspens
Here is the dinner I made for our anniversary- baked polenta topped with pretty much every vegetable from the farmers market- our Radishes, and Lettuce- fresh corn, tomatoes and almonds- very, very yummy if I might say- I'm going to write the recipe down, I just always forget to. but I'm getting better !
colorful radishes!!
We Harvested our garlic this week!!!! 7 total- one we harvested earlier- but I braided them and now they are curing on the porch.... just waiting to be used.
Garlic!!!!!!!
have you ever seen delphinum this tall? well this picture doesn't give it justice. but I assure you it's tall. Like over four feet- they are radiant- absolutely beautiful.
Jim planted me goblin flowers cause I like them. plus they are awesome- but I am so very lucky that he has created such a wonderful garden for us to enjoy!
The worlds healthiest muffin!!! and it tastes like it!- whole wheat flour, wheat bran, wheat germ- flax seed- thank goodness I added jam on top. and even still you need to put on a ton more to eat it! Next time I will add some applesauce and a banana to lighten it up!! But, these muffins give you energy all day!! This week alone I've hiked over 14 miles without tiring from just two of these muffins!
The endless lettuce and radishes!!! I have to keep coming up with things to do with them. I've already given bags away!!
Now I am proud of this soup- another farmers market creation. I had a plethura of corn, zucchini, onions, carrots, bell peppers and potatoes... all sauted then cooked, pureed and devoured!! tons of fresh parsley and served with fresh herbed biscuits! yummy- again I will write down this recipe. I will.
Well folks, I think that's it for now. Again thanks to the love of my life for making every day wonderful and full of laughter. Thanks to my wonderful friends!!! sitting soaking wet in the rain listening to classical music is the best way to spend a sunday!!! cheers to all! and as the norwegians say----- LEVE LIVET TIL FULLE!!!!!! ( live life to the fullest) SKAL!!!!

Wedding Stress

How do people cope with stress? -I try and workout- knit- cook and sew- but I'm still stressed! and I don't think I will stop being stressed until after the wedding! at least I hope I can let it all go then :-)
The stress this week, aside from the groom or groomsmen not being clothed yet, is that several people claim to have not gotten an invite!! what? I sent them out in may! honestly I did, ask my mom!- but aside from that glitch, which I think has been mostly fixed- (i'm sorry people, don't blame me, blame the postal service- your address' were right, i swear) the planning is trudging along.... slowly
ok whew! i'm done ranting sorry!
On a much happier note, our winter roomate payed us a visit this past weekend! ( he actually came for another wedding- but i'm just gonna fib and say he came bacause he missed us). We had a wonderful time keeping him occupied!
Do you ever notice how you do all the fun things when you have guests in town, it's like been a tourist in your own backyard. We jumped in the grottos ( icy viking plunge) went to the top of aspen mountain and had lunch, then to top it all off we had a BBQ- and he got mad props for his amazing pasta salad
which I don't think i have a picture of but I do know what he put in it- Andy's Peachy Keen Pasta Salad
lemon and parsley pasta
(if you can't find this pasta- normal will do fine, but squeeze some fresh lemon juice on it) 3-4 peeled and sliced fresh peaches black and green olives pitted and diced
2tbs olive oil
salt & pepper
and lots of fresh thyme ( from the garden)
Thanks andy for a wonderful visit! and we will see you in about a months time for our wedding!- which by the way I can't believe!- where did the summer go? will someone please tell me, please.

Ok, well I think that gets you up to date, I wanted to send a special thanks to nicole and erin- always have a wonderful time with you two- I like our sunday tadition of free music hopping! cheers my friends! have a great day, and I will talk to you all very, very soon....

Blah Blah Blah

Happy belated fourth everyone!!! and happy b-day to my amazing brother...
so sorry to everyone who has been so devoted to reading my blog! I have to admit I am one of those people who gets really excited about things at first, then I get distracted by something new. I don't think I am alone on this one- but maybe. ----here we go, you ready?
fist up, Garden update!!!!! yeah garden yeah!- so we have eaten four, count them four, strawberry's, enough salad to feed an army, and wonderful, wonderful herbs, (yet my basil is taking it's sweet time to grow) the garlic is coming along nicely- if only it would stop raining for an afternoon. but i digress- here are some pics...

The Dianthus has begun it's yearly pink promenade.

we had to put the screen on the strawberries- to delish to resist eh magpies? and yeah I kinda, accidentally planted the radishes too close together- so now we have like 50- and i'm not even sure if I like radishes.

I have kept myself busy by knitting, cooking, and trying to enjoy every bit of summer- and oh yeah, I started making tote bags to sell at the farmers market... so stop by kettle corn and buy one ok.

sweet slippers eh- thank you garn.com you norges really know how to knit.

this is the small bag- I made giant ones too!

ok so the uploading pictures thing is taking forever right now- and I don't have the patience to wait. so I will just add pictures later. I promise. plus I'm going to start writing up my recipes on here- because...... wait for it....

I'm going to try and write a cookbook(if not for anhone else but myself)- with delish recipes such as the vegetable gallette with herbed pesto (from our garden!) pictured above. so there. think on that for awhile and get back to me. have a fun week everyone!!
